Logan is making me vegan taco pizza tomorrow for dinner. I knew there was a reason I keep him around.
This is one thing I never thought I would like but love.
I really wanted to share this. This is a recipe that I came up with after a failed attempt at making vegan whipped cream with full fat coconut milk. The cream ended up creamy but not whipped cream creamy. Ya know? So I unintentionally made my new favorite smoothie. I have deemed it the Piña Colada Smoothie.
Full fat coconut milk, chilled for a few hours
1/2 a frozen banana, cut into smaller chunks
About 3/4 cup of ice
Agave nectar or pure maple syrup to taste
Splash of vanilla
Throw it all in the blender and blend until smooth and uniform in appearance.
This is so so so yummy and everyone, vegan and non-vegan, must try it!
